Brandy Pecan Crumb Topping On a Deep Dish Apple Pie
With a topping of candied pecan crumbs, this is one of the
best apple pies ever. It is a deep dish pie that can be made in a cast iron
skillet for a rustic look, which also helps make a great pie crust. You can
even let it cool in the pan and serve it at the table that way. Some people
would say that it would be even better if you served it with a big scoop of
vanilla ice cream. Enjoy!
Here's how to make the dough for the pie:
1 1/2 cups flour for all uses
2 ounces of sugar crystals
3/4 Teaspoon salt
1 1/2 sticks cold, unsalted butter
4–6 teaspoons of ice water
To make the dough for the pie: Mix the flour, sugar, salt,
and butter with a kitchen aid mixer until the mixture looks like chunky cookie
dough. You will add cold water and pulse the mixture until it forms a ball.
Take the dough out of the mixer and put it on a lightly
floured surface to work on. You'll start to flatten the dough a bit as you work
it with your hands. Once the dough is flattened to a thickness of about half an
inch to an inch, cover it with plastic wrap and put it in the fridge until you
are ready to use it. When you're ready to use the dough, take it out of the
fridge and let it warm up to almost room temperature. This will make it easier
to work with because it will be more flexible.
For the center:
Fresh Gala apples weighing 3 pounds
1/2 cup of brown sugar that is packed tight
1/4 Cup granulated sugar
2 teaspoons of whole pieces of butter
2 Tablespoons all-purpose flour
1 Tablespoon fresh lemon juice
1 spoonful of cinnamon
1/4 Teaspoon of vanilla bean paste
Brandy, 1 ounce
For the filling:
Peel the apples and take out the core. Cut the apples into
1/2-inch wedges and toss them in a bowl with the remaining filling ingredients:
sugar, brown sugar, lemon juice, vanilla bean paste, Brandy, flour, and
cinnamon until they are completely covered. Now, add the pieces of butter and
stir it again quickly. Now, heat your oven to 350°F while you finish making
your deep dish apple pie recipe and make the topping.
For the sauce:
2 tablespoons of butter at room temperature
Light brown sugar, 2 ounces
1/2 oz. of brandy
2 Tablespoons all-purpose flour
1/2 cup chopped pecans
1/4 cup of chopped walnuts
To make the Topping:
With your fingers, mix the butter, brown sugar, and Brandy
in a small bowl. Then, add the flour and mix again, but this time until the
dough is smooth and mix in all the nuts. Then, wrap the topping in saran wrap
and put it in the fridge until you are ready to use it.
To make the deep dish apple pie, you will need to prepare a
lightly floured surface and roll out the dough until it is about 1/8 of an inch
thick. Then, add to a cast-iron pan that has already been used. Start putting a spoonful
of the apple pie filling into the skillet with the dough on it. After about 30
minutes, you'll turn the pie at 108 degrees and let it cook for another 15 to 30
minutes. Then you'll take the pie out of the oven, put the crumble topping on
top, and then sprinkle some brown sugar on top. You will keep cooking until the
brown sugar has melted and the color is starting to change to caramel. It might
take another 15 to 20 minutes, after which you'll need to take it out of the
oven. If you have a wire rack for baking, you should let the pie cool on the
rack. This pie can be served warm or at room temperature. Like all apple pies near
me, it goes great with Blue Bell vanilla ice cream. Enjoy!
